🥒 Easy Refrigerator Pickles
Never made pickles before? It’s easier than you think! Pickling cucumbers, vinegar, water, pickling salt, garlic and dill—that’s about it. Grab a half bushel and give it a try!
Ingredients: - 6–8 pickling cucumbers, sliced
- 2 cups white vinegar
- 2 cups water
- 2 tbsp pickling salt
- 2 tbsp sugar (optional)
- Garlic cloves
- Fresh dill
Directions: - Pack cucumbers, garlic and dill into clean jars.
- Bring vinegar, water, salt and sugar to a boil.
- Pour over the cucumbers.
- Let cool, refrigerate, and enjoy after 24–48 hours.
No canning required!

It’s easy to grab food on the go, swing through a drive-thru, or pick up something convenient because you’re tired and short on time. We’ve all done it. I refuse to think anything but this has been a good year so far. Has it been easy? Not even close. There have been days where I questioned whether I had enough energy to keep going. There have been setbacks, disappointments, and moments where it felt like every step forward was met with two steps back. But that's only one way to measure a year. When I stop and look at what has actually changed, I can't help but feel grateful. Our relationships with farmers have grown stronger. We've built trust with new distributors who believe in what we're trying to accomplish. Every season we're creating a stronger network of people who care deeply about producing and sharing real food. Our farm has changed too. The outdoor spaces have expanded. The animal pens have grown. Every fence, every shelter, every improvement represents another step toward the vision we've been building—not just for ourselves, but for everyone who visits the farm to learn, volunteer, or simply reconnect with where food comes from. Perhaps one of the biggest changes has been what we've learned. This year alone, my understanding of homesteading, food production, animals, soil, and resilience has grown more than I ever expected. The more I learn, the more I realize how much there is still to discover. That's become one of the most rewarding parts of this journey. And then there's the lesson I probably needed the most. Learning to let go. Let go of trying to control every outcome. Let go of believing every problem is mine alone to solve. Let go of expectations that people will always do what they say they're going to do. Let go of the idea that everything has to happen on my timeline. I'm still practicing. Some days I'm better at it than others. But I know it's making me a better leader, a better business owner, and, hopefully, a better person. Growth doesn't always show up on a balance sheet. And even if it did, life isn't all zeros and ones. It isn't nearly as scientific as we sometimes try to make it. In many ways, it's far more intuitive and artistic. It's built on relationships, experience, trust, timing, and a hundred small decisions that can't be measured on a spreadsheet. Sometimes growth looks like stronger relationships. Sometimes it looks like healthier soil. Sometimes it looks like new skills. Sometimes it looks like wisdom earned the hard way. So yes, I refuse to think anything but this has been a good year. Not because everything went according to plan. But because, despite the challenges, we're stronger than we were a year ago. The farm is stronger. Our community is stronger. And the vision is clearer than it's ever been. To me, that's what success really looks like. Success isn't perfection. Success to me is the quiet confidence in knowing that we're moving in the right direction, learning as we go, and becoming a little better every season. That's a year worth being thankful for.
